3– I have a specific módule for Cookies (not part of your theme) This módule works perfect in other themes, but with your them it do not work.

Do I have to “create” a layout for the catalog page?
Is not it created in the theme?
I thought that such a complete subject would have this ready!

3 and 4. Try to disable Footer Builder in the Theme Settings → Footer

disabling the footer as you say, appears (finally) the Instagram module, which was “lost” But the modules still do not work.
I have also noticed that the registration of new clients does NOT work.
It allows to enter if the client exits previously but new ones can not be created. (This worked perfectly with the default fear of Prestashop)
I think there is some incompatibility between the subject and some module

The compliance module with the European Data Protection Law is called: “Protección de datos extendida (RGPD)”

2- The GDPR module must register the explicit authorization of the visitor so that we can store your personal data, including the email address.
It is displayed, requesting the confirmation “check” in all the sites where a user can leave your email or other personal information.

Newsletter form
Registration Form
Product availability notice
Contact Form
The module can be displayed in two ways, with a pop-up message or by adding the check box in the form.
The emergent message is preferable.

The module works well in the other theme that is installed on the site.
You can change the theme and check it.
In the configuration of the module only we only define the text to be displayed and the CMS page that has the legal text, has no more.
The site is unpublished and I’m not doing anything to avoid interfering with your work.
If you want to change the theme to the previous one so you can verify that the module works well.

I see that it works on the page https://www.lapielpiensa.es/autenticacion but not the registration in the newsletter
neither in the registry from the menu (this in particular does not work at all)
And the worst: The page of categories continues seeing to giant size.
This is turning out to be exhausting, we are losing a lot of time and effort, besides what you tell me about your demo that is without AMP I find disappointing, this was one of the main reasons why I chose this theme: how fantastic your theme was AMP on mobile
If thema can not work properly, I’ll ask you for a refund. It is a very big disappointment.

Sorry, I think your Theme does not work well
In the original theme of prestashop EVERYTHING works well.

I can try using the native prestashop module, but I think that when you buy a theme, everything included should work. (All the money I paid works, does not it?)
And with the pages of the categories so the theme is not at all usable. It is useless.

Well, I tried using the native prestashop module, this is what happens:
The legal notice appears but does NOT work, the newsletter registration occurs, accepts or does not accept the legal conditions. This should not happen, it is precisely what the law clearly states, the client MUST accept or otherwise their data can not be saved.
The penalties for breaking the law are very high, it is a very serious matter.

From my point of view, if you develop for Prestashop, what you do must be compatible, if it is not compatible, it is NOT useful
Or using your theme limits the use of the rest of existing modules for Prestashop. The best thing that Prestashop has is the great assortment of modules that exist, if your thema can not be made compatible with the module I do not want it, it returns the money I paid and that’s it.
