How can I deactivate the license of the theme of a test installation to later use it in the final web?

Hi. You don’t need to deactivate license for test shop.
But if you want to do that, go to Theme Settings → Welcome tab and remove license code there

Hi Fred,

I already tried to delete the code in the place you told me but there is no “delete code” option. I delete it but it comes back later. There is no button to confirm the deletion. When I click “Save” it asks me to fill it in with a valid code.

Yes, I see. Just never mind. You can use the same license for both test and production websites
